Apple Pie with Cheddar Cheese Crust

Ingredients

  •  
  • 1 1/2 cupSugars, granulated
  • 1/4 cupCornstarch
  • 2/3 cupApple juice, canned or bottled, unsweetened, without added ascorbic acid
  • 2/3 cupAlcoholic beverage, wine, dessert, sweet
  • 2 tblsButter, with salt
    Diet

  • 1 tspLemon peel, raw
  • 8 medApples, raw, with skin
  •  
  • 2 cupWheat flour, white, all-purpose, enriched, bleached
  • 1 tspSalt, table
  • 2/3 cupShortening industrial, lard and vegetable oil
  • 3/4 cupCheese, cheddar
    Diet

  • 5 tblsWater

Directions

1. Combine sugar and cornstarch in a large saucepan. Stir in apple juice, wine, butter, and lemon peel. Cook over medium heat until mixture boils.

2. Add apples and cook gently until barely tender.

cRUsT:

1. Preheat oven to 375F. Mix flour, salt, and shortening with a pastry blender until mixture resembles coarse meal. Stir in cheese.

2. Add water gradually and mix lightly with a fork to form dough. Divide pastry in halves and roll out one half to fit a pie pan.

3. Roll second half of pastry and cut into 10 strips. Spoon filling into pastry-lined pan. Weave pastry strips across filling to make lattice top.

4. Bake for 40 minutes, or until done. Serve warm.
