Apple Pie with Cheddar Cheese Crust

Ingredients
1 1/2 cup Sugars, granulated 1/4 cup Cornstarch 2/3 cup Apple juice, canned or bottled, unsweetened, without added ascorbic acid 2/3 cup Alcoholic beverage, wine, dessert, sweet 2 tbls Butter, with salt Diet
1 tsp Lemon peel, raw 8 med Apples, raw, with skin 2 cup Wheat flour, white, all-purpose, enriched, bleached 1 tsp Salt, table 2/3 cup Shortening industrial, lard and vegetable oil 3/4 cup Cheese, cheddar Diet
5 tbls Water
Directions
1. Combine sugar and cornstarch in a large saucepan. Stir in apple juice, wine, butter, and lemon peel. Cook over medium heat until mixture boils.
2. Add apples and cook gently until barely tender.
cRUsT:
1. Preheat oven to 375F. Mix flour, salt, and shortening with a pastry blender until mixture resembles coarse meal. Stir in cheese.
2. Add water gradually and mix lightly with a fork to form dough. Divide pastry in halves and roll out one half to fit a pie pan.
3. Roll second half of pastry and cut into 10 strips. Spoon filling into pastry-lined pan. Weave pastry strips across filling to make lattice top.
4. Bake for 40 minutes, or until done. Serve warm.
