Fried Green Tomato and Vegetable Platter

Ingredients
1 cup Lima beans, immature seeds, frozen, baby, cooked, boiled, drained, without salt 1 cup Corn, sweet, yellow, canned, whole kernel, drained solids 1/2 cup Peppers, sweet, red, raw 3 tbls Basil, fresh 2 tbls Sauce, ready-to-serve, pepper or hot 1 tbls Vinegar, cider 1 tsp Oil, olive, salad or cooking 2 clove Garlic, raw 3 tbls Cornmeal, degermed, enriched, yellow 2 tbls Cheese, parmesan, hard Diet
1/8 tsp Salt, table 1/8 tsp Spices, pepper, black 8 med Tomatoes, green, raw 2 tsp Oil, olive, salad or cooking 1 med Tomatoes, red, ripe, raw, year round average 1 tbls Basil, fresh
Directions
1. Combine first 8 ingredients in a bowl. Stir well. Cover and chill for 1 hour.
2. Combine cornmeal and cheese in a small plastic bag.
3. Sprinkle salt and pepper over green tomato slices. Place slices, one at a time, in the cornmeal mixture. Seal bag and shake to coat.
4. Heat 2 teaspoons oil in a skillet over medium heat.
5. Add green tomato slices. Cook 3 minutes on each side or until browned.
6. Arrange the lima bean mixture, fried green tomato slices, and the red tomato slices on a serving platter. Garnish with basil. Serve.
