Fried Green Tomato and Vegetable Platter

Directions

1. Combine first 8 ingredients in a bowl. Stir well. Cover and chill for 1 hour.
2. Combine cornmeal and cheese in a small plastic bag.
3. Sprinkle salt and pepper over green tomato slices. Place slices, one at a time, in the cornmeal mixture. Seal bag and shake to coat.
4. Heat 2 teaspoons oil in a skillet over medium heat.
5. Add green tomato slices. Cook 3 minutes on each side or until browned.
6. Arrange the lima bean mixture, fried green tomato slices, and the red tomato slices on a serving platter. Garnish with basil. Serve.
