Ingredients

  • 2 lbSquash, winter, butternut, raw
  • 2 medApples, raw, with skin
  • 1 largeOnions, raw
  • 3 tblsButter, with salt

  • 1 tspSpices, ginger, ground
  • 1/2 cupApple juice, canned or bottled, unsweetened, without added ascorbic acid
  • 2 cupSoup, vegetarian vegetable, canned, prepared with equal volume water, commercial
  • 1/4 cupMilk, fluid, 3.25% milkfat

Directions

1. Heat the butter in a soup pot and saute the onions for about 10 minutes.

2. Add the squash, apples, and the ground ginger.

3. Add the cider and stock, cover and cook until softened, about 25 minutes, and mix well.

4. Add warm milk just before serving and mix well.
