Tuna Cakes with Tartar Sauce

Ingredients

  •   Cooking spray
  • 3/4 cupCelery, raw
  • 3/4 cupOnions, raw
  • 2 tblsCheese, cream
    Diet

  • 2 tspLemon juice, raw
  • 1/8 tspSpices, pepper, white
  • 1 dashSpices, pepper, red or cayenne
  • 1/3 cupBread crumbs, dry, grated, plain
  • 1 tspSpices, dill weed, dried
  • 9 1/2 ozFinfish, tuna, light, canned in water, drained solids
  • 1 largeEgg, white, raw, fresh
  • 6 tspSalad dressing, mayonnaise, soybean and safflower oil, with salt

Directions

1. Coat a large, nonstick skillet with cooking spray. Place over medium-high heat until hot.

2. add celery and onion. Sauti until tender. Remove from skillet and place in a medium bowl.

3. add cream cheese and next 3 ingredients. Stir well.

4. add breadcrumbs and next 3 ingredients. Stir well. Divide mixture into 8 equal portions, shaping each into a 2 -1/2" cake.

5. Coat skillet with cooking spray. Place over medium-high heat until hot. Add 4 cakes and cook 2 minutes on each side or until browned. Remove cakes from skillet. Set aside and keep warm. Repeat procedure with remaining cakes. Serve with tartar sauce.
