Chicken Noodle Soup

Ingredients

  • 6 cupWater
  • 1 tblsSpices, pepper, black
  • 1 tspSpices, basil, ground
  • 1 tspSpices, oregano, ground
  • 1 lbChicken, broilers or fryers, meat and skin and giblets and neck, raw
  • 3 medParsnips, raw
  • 3 cloveGarlic, raw
  • 2 wholeLeeks, (bulb and lower leaf-portion), raw
  • 2 stalkCelery, raw
  • 2 cupCarrots, raw
  • 3/4 tspSalt, table
  • 1/8 tspSpices, pepper, black
  • 2 cupNoodles, egg, dry, enriched

Directions

1. Combine first 9 ingredients in an a large dutch oven or stock pot; bring to a boil. Reduce heat to medium, and cook, uncovered, 1 hour.

2. Remove chicken pieces from broth; place chicken in a bowl, and chill 15 minutes. Strain broth through a sieve into a large bowl; discard solids.

3. Remove chicken from bones; shred meat into bite-size pieces. Discard bones. Return broth to pan. Add chicken, sliced carrot, salt, and pepper; bring to a boil. Partially cover, reduce heat to medium, and cook 10 minutes.

4. Add noodles. Partially cover and cook an additional 10 minutes.
