Spicy Pimento Soup

Ingredients

  • 4 ozPimento, canned
  • 2 tblsButter, with salt
    Diet

  • 2 1/2 tblsWheat flour, white, all-purpose, enriched, bleached
  • 14 1/2 ozSoup, chicken broth, canned, prepared with equal volume water, commercial
  • 1 1/2 cupCream, fluid, half and half
  • 2 tspOnions, raw
  • 1/2 tspSalt, table
  • 1/4 tspSauce, ready-to-serve, pepper or hot

Directions

1. Place pimiento in a blender and process until smooth, stopping once to scrape down the sides. Set the pimiento aside.

2. Melt butter in a heavy saucepan over low heat; add flour, and stir until mixture is smooth. Cook 1 minute, stirring constantly.

3. Add chicken broth and half and half gradually to flour mixture; cook over medium heat, stirring constantly, until mixture is thick and bubbly.

4. Stir in pimiento, onion, salt, and hot sauce; cook over low heat, stirring constantly, until thoroughly heated.
