Raisin Bread Pudding

Ingredients
1/2 cup Sugars, granulated 1/4 cup Sugars, brown 1 tsp Spices, cinnamon, ground 1 tsp Spices, nutmeg, ground 3 large Egg, whole, raw, fresh 1 1/2 cup Soy milk, fluid 1 1/2 cup Water 2 tbls Margarine, soft, soybean (hydrogenate and regular), without salt 2 tsp Vanilla extract 12 slice Bread, white, commercially prepared, toasted 3/4 cup Raisins, seedless
Directions
1. Preheat oven to 325º degrees.
2. In a large bowl combine the sugars. add cinnamon and nutmeg and mix well. Set aside 2 tablespoons of this mixture.
3. To the remaining mixture, add eggs and mix well.
4. Then stir in soy milk, water, margarine, and vanilla.
5. Toss the bread cubes with the raisins and add to the liquid mixture. Mix well until all the bread cubes are moistened. Let rest about 15 minutes to absorb the liquid.
6. Transfer the cubes and any extra liquid to a greased 8 inch square baking dish. Sprinkle with reserved cinnamon and sugar mixture.
7. Bake for about 1 hour or until an inserted knife comes out almost clean from the center.
