Orange Rosemary Roasted Turkey Breast

Ingredients

  • 5 lbTurkey, all classes, breast, meat and skin, raw
  • 2 ozParsley, raw
  • 2 ozSpices, thyme, fresh
  • 2 ozRosemary, fresh
  • 2 medOranges, raw, all commercial varieties
  • 1 wholeLemons, raw, with peel
  • 1/2 tspSpices, pepper, black
  • 1/2 tspSpices, paprika

Directions

1. Rinse and pat dry turkey breast with paper towels.

2. In a medium bowl, combine the parsley, thyme, and rosemary.

3. Grate the peel from the oranges and lemon. Set the oranges and lemon aside. Add the peels to the herb mixture and toss until combined.

4. Rub the herb mixture over the skin of the turkey. Place the turkey on a rack in a large roasting pan.

5. Cut the oranges and lemon in half and squeeze their juices over the turkey.

6. Sprinkle with the pepper and paprika.

7. Insert a meat thermometer in the thickest part of the breast.

8. Roast, uncovered, at 32 5 degrees Fahrenheit for 2 1/2 hours or until the thermometer registers 170 degrees to 175 degrees, basting frequently with the pan juices.

9. Let stand for at least 15 minutes before carving. Remove and discard the skin before serving.
