Crepes with Stir Fry Vegetables

Ingredients
2 tsp Oil, sesame, salad or cooking 2 med Onions, spring or scallions (includes tops and bulb), raw 2 cup Cabbage, chinese (pak-choi), raw 1/2 med Peppers, sweet, red, raw 1 med Carrots, raw 1/2 cup Mushrooms, raw 1/2 cup Mung beans, mature seeds, sprouted, raw 4 oz Tofu, firm, prepared with calcium sulfate and magnesium chloride (nigari) 2 tsp Ginger root, raw 1 clove Garlic, raw 2 tbls Soy sauce made from hydrolyzed vegetable protein 8 serving CONTINENTAL MILLS, KRUSTEAZ Buttermilk Mini Pancakes, frozen, ready to microwave
Directions
1. Preheat the oven to 32 5 degrees Fahrenheit.
2. Wrap crepes in foil and place in oven to warm, about 8 minutes.
3. Heat sesame oil in a wok or large skillet until very hot.
4. Add green onions, bok choy, red bell pepper, carrots and mushrooms.
5. Stir-fry vegetables 4 minutes until crisp tender.
6. Add sprouts, tofu, ginger and garlic and continue cooking 3 minutes until sprouts are soft.
7. Stir in soy sauce.
8. To eat, top with generous helping of vegetables and roll up burrito style.
