Shrimp Scampi Flambe

Ingredients

  • 1 1/2 lbCrustaceans, shrimp, mixed species, raw
  • 1/2 cupWheat flour, white, all-purpose, enriched, bleached
  • 1/8 tspSalt, table
  • 1/8 tspSpices, pepper, black
  • 1/8 tspSpices, pepper, red or cayenne
  • 1/2 cupOil, olive, salad or cooking
  • 4 cloveGarlic, raw
  • 2 wholeShallots, raw
  • 1/2 cupParsley, raw
  • 1/2 tspSpices, oregano, ground
  • 2 tblsAlcoholic beverage, wine, dessert, sweet
  • 2 tblsAlcoholic beverage, distilled, rum, 80 proof

Directions

1. In a small bowl, season flour with salt, pepper, and cayenne.

2. Dredge shrimp in flour.

3. In a skillet, saute shrimp in olive oil for 5 minutes over high heat, shaking briskly. Remove shrimp with a slotted spoon to a shallow casserole dish.

4. Add garlic, shallots, parsley, and oregano to olive oil, saute over medium heat for 3 minutes, shaking the pan briskly.

5. Remove herbs with a slotted spoon to casserole. Add wine and brandy to skillet and ignite. When flames die down, pour sauce over shrimp.

6. Broil for 2 minutes.

7. Suggested to serve with pasta.
