Garlicy Pasta Soup

Ingredients

  • 7 cupWater
  • 1 leafSpices, bay leaf
  • 1 tspSalt, table
  • 6 cloveGarlic, raw
  • 1/2 tspSpices, thyme, ground
  • 2 tspOil, olive, salad or cooking
  • 1/4 lbMacaroni, dry, enriched
  • 1 lbBroccoli, flower clusters, raw
  • 1 pinchSpices, pepper, black
  • 2 medEgg, whole, raw, fresh
  • 1/4 cupCheese, parmesan, hard
    Diet

  • 2 tblsParsley, raw
  • 1/3 cupCroutons, seasoned

Directions

1. Combine the water, bay leaf, and salt in a soup pot and bring to a simmer. Add the garlic, thyme, and olive oil, cover, and simmer for 15 minutes.

2. Add the fusilli and broccoli, turn up the heat slightly, and continue to simmer, uncovered, until the fusilli is cooked al dente, about 10 minutes.

3. Beat the eggs in a bowl and stir in the cheese and parsley. Ladle some soup into the eggs and stir together.

4. Turn the heat off under the soup and stir the egg mixture into the soup pot.

5. Stir for a minute and serve, garnishing each bowl with croutons. Season with black pepper.
