Herbed Lamb Meatloaf

Ingredients
| 1/3 cup | Alcoholic beverage, wine, table, white |
| 2 tsp | Spices, thyme, ground |
| 1/2 tsp | Spices, rosemary, dried |
| 1/4 tsp | Spices, pepper, black |
| 1/4 tsp | Spices, pepper, red or cayenne |
| 2 large | Egg, white, raw, fresh |
| 1 med | Egg, whole, raw, fresh |
| 1 cup | Cereals, oats, regular and quick and instant, without fortified, dry |
Directions
1. Coat a nonstick skillet with cooking spray; place over medium-low heat.
2. Add mushrooms, onion, and garlic; cover and cook 15 minutes or until tender. Increase heat to medium-high; cook, uncovered, 5 minutes, stirring frequently. Add wine, and cook 3 minutes, stirring frequently. Remove from heat, and set aside.
3. Combine thyme and next 6 ingredients in a bowl; stir well with a wire whisk. Add lamb and next 3 ingredients; stir well. Add mushroom mixture; stir well.
4. Shape into a 9x5 inch loaf; place on a rack coated with cooking spray. Place rack in a shallow roasting pan. Bake at 350F for 1 hour and 15 minutes or until done. Let stand 5 minutes.
