Spicy Cauliflower Soup

Ingredients
| 1 tbls | Oil, olive, salad or cooking |
| 1 cup | Onions, spring or scallions (includes tops and bulb), raw |
| 4 cup | Soup, chicken broth, canned, prepared with equal volume water, commercial |
| 1/4 cup | Wheat flour, white, all-purpose, enriched, bleached |
| 6 oz | Cheese, monterey Diet
Diet Substitutes: Cheese, muenster
|
| 1/2 cup | Peppers, sweet, red, raw |
| 1/4 tsp | Sauce, ready-to-serve, pepper or hot |
Directions
1. Heat oil in a large saucepan over medium heat.
2. Add green onions and saute about 3 minutes or until tender.
3. Add 3 cups broth; bring to a boil.
4. Add cauliflowers and return to boiling. Reduce heat to medium-low; cook about 6 minutes or until cauliflower is almost tender.
5. Whisk together flour and remaining 1 cup chicken broth in a small bowl. Stir into saucepan. Bring to boiling; cook, stirring occasionally, 2 -3 minutes or until soup is thickened.
6. Remove soup from heat. Add cheese, stirring until melted.
7. Stir in roasted red peppers, and hot-pepper sauce. Serve.
