Tofu with Shrimp and Vegetables

Ingredients
| 12 oz | Tofu, firm, prepared with calcium sulfate and magnesium chloride (nigari) |
| 2 med | Onions, spring or scallions (includes tops and bulb), raw |
| 2 med | Egg, whole, raw, fresh |
| 8 oz | Crustaceans, shrimp, mixed species, raw |
| 2 tbls | Oil, vegetable corn, salad or cooking |
| 3 tbls | Soy sauce made from hydrolyzed vegetable protein |
Directions
1. Heat oil in a skillet over medium-heat and saute all the vegetables until tender about 5 minutes. Mash the tofu with a fork.
2. Add the shrimp, tofu, soy sauce, and sugar to the vegetables. Mix well.
3. Cook until everything is heated. beat the eggs and pour over mixture.
4. Cook until eggs are done. Suggested to serve in a bowl over rice.
