Roast Turkey with Wine Sauce

Ingredients
| 1 1/2 lb | Turkey, fryer-roasters, breast, meat only, raw |
| 1/4 tsp | Spices, pepper, black |

| 1 tsp | Oil, olive, salad or cooking |
| 1/4 cup | Cherries, sour, red, canned, extra heavy syrup pack, solids and liquids |
| 1 cup | Alcoholic beverage, wine, table, red |
| 1/8 tsp | Spices, pepper, black |
Directions
1. Preheat the oven to 350 degrees Fahrenheit.
2. Trim any tough white tissue and excess fat from the tenderloin. Sprinkle lightly with salt and pepper. Place the shallots on top of the tenderloin.
3. Lay the tenderloin on a rack in a roasting pan. Spray with cooking spray. Roast in the preheated oven for 25 minutes until medium rare.
4. While the turkey is cooking, make the sauce. Heat the oil in a small saucepan over medium heat. Drop the chopped shallots into the pan and fry until they soften.
5. Add cherries, wine, and arrowroot. Simmer for 6 minutes.
6. Add the sauce into a blender and mix until smooth. Press through a sieve into a small saucepan to remove the cherry skins and shallot pieces. Stir and reheat the sauce in the saucepan until clear and thicken.
7. Add the parsley, salt, and pepper.
8. Remove roast from oven. Slice and serve with sauce.
9. Also suggested to serve with rice and vegetables.
