Apple Raisin Muffins

Ingredients
| 1 cup | Wheat flour, white, all-purpose, enriched, bleached |
| 1 tsp | Leavening agents, baking powder, double-acting, sodium aluminum sulfate |
| 1/2 tsp | Leavening agents, baking soda |
| 1/2 tsp | Spices, cinnamon, ground |
| 1/4 tsp | Spices, nutmeg, ground |
| 1/2 cup | Raisins, golden seedless |
| 3/4 cup | Applesauce, canned, sweetened, without salt |
| 1/2 cup | Apple juice, canned or bottled, unsweetened, without added ascorbic acid |
| 2 large | Egg, white, raw, fresh |
| 2 tbls | Oil, vegetable corn, salad or cooking |
Directions
1. Heat oven to 400 F. Line 12 muffin cups with paper baking cups or spray bottoms only with no-stick cooking spray.
2. Combine dry ingredients including raisins and mix well.
3. add combined applesauce, apple juice, egg whites and oil, mixing just until dry ingredients are moistened. Fill muffin cups almost full. Sprinkle remaining 1/4 cup oats evenly over batter, patting gently.
4. bake 20 to 2 2 minutes or until golden brown. Let muffins stand a few minutes; remove from pan.
