Potato Pancakes with Smoked Salmon

Ingredients
3 large Potato, flesh and skin, raw 2 tbls Cornstarch 2 med Egg, whole, raw, fresh 4 large Egg, white, raw, fresh 1/4 cup Cream, fluid, heavy whipping Diet
1 dash Salt, table 1 dash Spices, pepper, black 1 tbls Lemon juice, raw 1/4 cup Cream, sour, reduced fat, cultured 12 oz Finfish, salmon, chinook, smoked, (lox), regular 4 oz Finfish, caviar, black and red, granular 1 sprig Spices, dill weed, fresh
Directions
1. Cook the potatoes in salted, boiling water. When cooked, pass potatoes through a food mill.
2. Place potato puree in an electric mixer. Add corn starch and mix thoroughly.
3. Slowly incorporate eggs and egg whites, then heavy cream. Season with salt and pepper.
4. In a small bowl, combine the lemon juice and the sour cream. Set aside.
5. Preheat a non-stick skillet over medium heat.
6. Spoon the potato mixture into the skillet, keeping a round shape. Cook for about 1-1/2 minutes on each side.
7. Place pancakes on a plate. Serve with one slice of smoked salmon, one tablespoon of the reserved sour cream mixture, and a heaping teaspoon of caviar. Garnish with dill and serve.
