Ingredients
3 cup Chicken, broilers or fryers, light meat, meat only, cooked, stewed 1 large Peppers, sweet, red, raw 1/2 cup Onions, raw 1 large Cucumber, peeled, raw 1 1/2 cup Pineapple, raw 3 tbls Oil, olive, salad or cooking 1/4 cup Lime juice, raw 1 cup Parsley, raw 1 cup Chives, raw 1/4 cup Spices, thyme, fresh 2 tbls Orange peel, raw 1/2 tsp Salt, table 1/4 tsp Spices, pepper, black
Directions
1. In large bowl, toss together chicken, red pepper, red onion, cucumber and pineapple.
2. In bowl of food processor, place all ingredients for dressing. Process until pureed. Pour dressing over salad ingredients and toss well. Serve immediately, or cover and refrigerate until ready to be served.
