Pasta and Shrimp Salad

Ingredients

  • 1 lbMacaroni, dry, enriched
  • 16 ozCrustaceans, shrimp, mixed species, raw
  • 6 medOnions, spring or scallions (includes tops and bulb), raw
  • 3 smallSquash, summer, zucchini, includes skin, raw
  • 10 wholeTomatoes, red, ripe, raw, year round average
  • 1 tblsSpices, marjoram, dried
  • 1 tblsGarlic, raw
  • 1 dashSpices, pepper, black
  • 1/2 ozCheese, romano
  • 1/4 cupOil, olive, salad or cooking
  • 1/3 cupVinegar, cider
  • 2 cupLettuce, looseleaf, raw

Directions

1. Cook the pasta in boiling water for about 5 minutes or until tender. add the shrimp about 4 minutes after the pasta. Drain all.

2. In a large bowl, combine the pasta, shrimp, scallions, zucchini, and tomatoes.

3. Sprinkle with Italian seasoning, garlic, pepper, and cheese. Mix well.

4. Drizzle the olive oil and vinegar on top and toss well. Refrigerate until chilled. Line a bowl with the lettuce leaves and spoon the mixture into the bowl. Serve.
