Wild Rice Stuffing

Ingredients

  • 1/2 cupWild rice, raw
  • 1/4 cupRaisins, seedless
  • 1 tblsVegetable oil, canola
  • 5 medOnions, spring or scallions (includes tops and bulb), raw
  • 1/2 cupCelery, raw
  • 1 cupCranberries, raw
  • 1 tblsOrange peel, raw
  • 1/2 tspSpices, thyme, ground

Directions

1. Put the wild rice in a saucepan.

2. Add 1 cup water and raisins. Cook over medium heat for 1 hour, or until the rice is tender. Drain.

3. In a skillet, heat oil. Add the onions and celery. Saute until tender.

4. Add the cranberries, orange rind, thyme, and rice. Mix thoroughly and serve warm.
