Ingredients
3/4 cup Water 1/2 tsp Salt, table 1/2 tsp Spices, curry powder 2/3 cup Couscous, dry 8 oz Chicken, broilers or fryers, breast, meat only, cooked, roasted 1/2 cup Chickpeas (garbanzo beans, bengal gram), mature seeds, canned 1/2 cup Cabbage, red, raw 1/4 cup Onions, spring or scallions (includes tops and bulb), raw 1/4 cup Celery, raw 1 tsp Orange peel, raw 1/4 tsp Spices, pepper, black 6 tbls Orange juice, raw 2 tsp Oil, olive, salad or cooking
Directions
1. Bring water, salt, and curry powder to a boil in a medium saucepan.
2. Stir in couscous. Remove from heat. Let stand, covered, 5 minutes. Fluff with a fork.
3. Add chicken and next 4 ingredients.
4. Combine orange rind and next 3 ingredients in a bowl. Stir with a wire whisk until blended. Add to couscous mixture; toss well. Serve.
