Potato Puff with Cheddar Cheese

Ingredients

  • 2 cupWater
  • 2 tblsMargarine, regular, unspecified oils, with salt added
  • 1/2 tspSalt, table
  • 1/2 cupMilk, nonfat, fluid, with added nonfat milk solids and vitamin A (fat free or skim)
  • 2 cupPotatoes, mashed, dehydrated, granules without milk, dry form
  • 1 largeEgg, whole, raw, fresh
  • 1/2 cupCream, sour, reduced fat, cultured
  • 2 ozCheese, low fat, cheddar or colby -- shredded
  •   Cooking spray

Directions

1. Heat oven to 350 degrees Fahrenheit.

2. Lightly coat a casserole dish with cooking spray.

3. In a medium saucepan, heat water, margarine, and salt to a rolling boil.

4. Remove from heat. Stir in milk and potato flakes.

5. Blend in egg, sour cream, and cheese and mixing thoroughly.

6. Scoop or spoon into the prepared casserole dish.

7. Bake in oven for 20 minutes or until lightly golden brown and puffed.
