Ingredients
2 1/2 lb Potato, flesh and skin, raw 1 med Peppers, sweet, red, raw 1 med Peppers, sweet, green, raw 1 large Peppers, sweet, yellow, raw 14 oz Beans, kidney, all types, mature seeds, canned 1 med Avocados, raw, California 1/4 cup Basil, fresh 1/4 cup Vinegar, cider 2 clove Garlic, raw 1 tsp Mustard, prepared, yellow 1/4 cup Oil, vegetable corn, salad or cooking 1 tbls Basil, fresh 1/2 tsp Salt, table 1/2 tsp Spices, pepper, black 1/8 tsp Spices, chili powder 1/8 tsp Spices, cumin seed
Directions
1. Cook potatoes until fork tender, drain, cool, and cut into bite sized chunks. Mix in remaining salad ingredients, except basil.
2. Whisk together the dressing ingredients, pour over salad, toss gently to coat. Chill salad for 1 hour to allow flavors to blend. Serve.
