Potato Cheese Bake

Ingredients
6 med Potato, flesh and skin, raw 1 cup Cheese, cottage, lowfat, 1% milkfat 1/4 cup Egg substitute, liquid 1 dash Spices, pepper, red or cayenne Cooking spray 1/2 cup Cheese, low fat, cheddar or colby 1/4 cup Onions, spring or scallions (includes tops and bulb), raw 1/4 cup Parsley, raw 1 tbls Parsley, raw
Directions
1. Preheat oven to 375 degrees Fahrenheit.
2. Cook potatoes in boiling water, to cover, 8 to 10 minutes or just until tender. Drain.
3. Place cottage cheese, egg substitute, and red pepper in container of an electric blender or food processor. Process 1 minute or until smooth. Set aside.
4. Place half of potatoes in an 8" square baking dish coated with cooking spray. Layer each half with cheese, green onions, 1/4 cup parsley, and cottage cheese mixture. Repeat layers with remaining ingredients, reserving some parsley.
5. Bake, uncovered, for 25 to 30 minutes or until lightly browned. Sprinkle remaining parsley over top and serve.
