Beef Stew with Red Wine

Ingredients

  • 3 lbBeef, round, top round, separable lean and fat, trimmed to 1/8" fat, all grades, raw
  • 2 cupOnions, raw
  • 2 tspGarlic, raw
  • 1 cupAlcoholic beverage, wine, table, red
  • 28 ozTomatoes, red, ripe, canned, whole, regular pack
  • 3 largePotato, flesh and skin, raw
  • 1/2 tspSpices, thyme, ground
  • 2 tblsTomato products, canned, puree, with salt added
  • 1/2 tspSpices, oregano, ground
  • 4 smallCarrots, raw
  • 1 cupBeans, kidney, all types, mature seeds, raw
  • 1/2 packagePeas, green, frozen, unprepared
  • 1 leafSpices, bay leaf
  • 1/2 tspSpices, basil, ground
  • 1/4 tspSalt, table

Directions

1. Heat a large, dutch oven until very hot. Add the beef cubes.

2. Sear beef. When browned all over, add the red onions and garlic. Saute for a few minutes with the beef.

3. Add the wine and allow to cook on high heat for 1 minute. Lower heat to just above a simmer, add the tomatoes. Stir the ingredients with the potatoes.

4. Add the rest of the ingredients. Stir well and cook for about 2 hours, or until the beef is tender, stirring frequently. Add water if necessary and cook partially covered. Serve.
