Stir Fried Oysters

Ingredients
1 1/2 lb Mollusks, oyster, eastern, farmed, raw 1 tsp Cornstarch 2 tbls Water 1 tsp Sauce, oyster, ready-to-serve 1 1/2 tsp Soy sauce made from hydrolyzed vegetable protein 1/8 tsp Salt, table 1 tbls Vegetable oil, soybean lecithin 1/2 tsp Alcoholic beverage, wine, table, white 2 clove Garlic, raw 2 med Onions, spring or scallions (includes tops and bulb), raw 1 slice Ginger root, raw
Directions
1. Bring 4 cups of water in large saucepan to boil. Plunge oysters into boiling water. Cook 10 to 15 seconds, until edges begin to curl. Remove with slotted spoon and transfer to paper towels to drain. Set aside.
2. Blend cornstarch with 2 tablespoons water until smooth. Stir in oyster sauce, soy sauce, and salt. Set aside.
3. Heat oil in wok until hot. Add oysters, wine, garlic, green onions, and ginger. Stir-fry 15 seconds. Drain off any excess liquid that accumulates.
4. Stir in reserved sauce. Stir-fry 1 minute, just until sauce bubbles and thickens. Serve.
