Roquefort and Cream Cheese Mold

Ingredients

  • 1 packageDesserts, gelatins, dry mix
  • 1/4 cupWater
  • 5 ozCheese, roquefort
  • 5 ozCheese, cream
    Diet

  • 1/2 cupCream, fluid, light whipping
    Diet

  • 4 medOnions, spring or scallions (includes tops and bulb), raw
  • 2 tblsNuts, pine nuts, pignolia, dried
  • 8 largeOlives, ripe, canned (small-extra large)
  • 1 dashSalt, table
  •   Cooking spray

Directions

1. Sprinkle gelatin over water and let stand.

2. Push Roquefort cheese through a strainer. Add cream cheese and cream to Roquefort cheese. Mix well.

3. Add gelatin, scallions, pine nuts, olives, and salt to cheese mixture. Mix well.

4. Spray a ring mold with cooking spray and pour mixture into the mold. Chill, gently stirring occasionally until set. Suggested to serve with crackers.
