Ingredients
2 tbls Oil, vegetable corn, salad or cooking 2 med Squash, summer, all varieties, raw 2 med Onions, spring or scallions (includes tops and bulb), raw 1 med Peppers, sweet, green, raw 1 med Tomatoes, red, ripe, raw, year round average 1 dash Salt, table 1/2 tsp Spices, chili powder 1/4 tsp Sweeteners, NUTRASWEET, EQUAL, packet
Directions
1. Heat oil in large skillet. Add squash.
2. Add green onions and bell pepper. Cook until tender, about 15 minutes or more.
3. Add remaining ingredients. Cook a few more minutes, just until tomatoes are soft and serve.
