Ingredients

  • 2 tblsOil, vegetable corn, salad or cooking
  • 2 medSquash, summer, all varieties, raw
  • 2 medOnions, spring or scallions (includes tops and bulb), raw
  • 1 medPeppers, sweet, green, raw
  • 1 medTomatoes, red, ripe, raw, year round average
  • 1 dashSalt, table
  • 1/2 tspSpices, chili powder
  • 1/4 tspSweeteners, NUTRASWEET, EQUAL, packet

Directions

1. Heat oil in large skillet. Add squash.

2. Add green onions and bell pepper. Cook until tender, about 15 minutes or more.

3. Add remaining ingredients. Cook a few more minutes, just until tomatoes are soft and serve.
