Stuffed Acorn Squash Saute

Ingredients
1 med Squash, winter, acorn, raw 1/4 cup Celery, raw 1/4 tsp Salt, table 1/4 tsp Spices, cinnamon, ground 2 slice Bread, raisin, enriched 6 oz Pork, fresh, ground, raw 1/4 cup Onions, raw 1/4 tsp Spices, curry powder 1/2 cup Applesauce, canned, sweetened, without salt Cooking spray
Directions
1. Coat a 10x6x2 baking dish with cooking spray. Halve squash and discard seeds.
2. Place squash, cut side down, in a baking dish. Bake, uncovered, at 350 degrees Fahrenheit in oven for 50 minutes.
3. Meanwhile, for stuffing, in a skillet cook pork, celery, and onion until meat is no longer pink and vegetables are tender. Drain off fat.
4. Stir in salt, curry powder, and cinnamon and cook 1 minute more.
5. Stir in applesauce and bread cubes.
6. Turn squash cut side up in dish.
7. Place stuffing in squash halves.
8. Bake uncovered, 20 minutes more. Serve.
