Melon Berry Fruit Salad

Ingredients

  • 1/2 medMelons, cantaloupe, raw
  • 2 medKiwi fruit, (chinese gooseberries), fresh, raw
  • 1/2 quartStrawberries, raw
  • 1/4 quartRaspberries, raw
  • 3 tblsSpearmint, fresh
  • 1/4 cupOrange juice, raw

Directions

1. Scoop out the cantaloupe with a melon baller and place balls in a bowl. Pour any cantaloupe juice in the bowl.

2. Cut the kiwi crosswise into thin slices, then quarter the slices. Add to the cantaloupe.

3. Set aside some attractive strawberries for garnish. Hull and slice the remaining strawberries lengthwise, enough to make 1 cup and place in the bowl.

4. Add the raspberries. Sprinkle fruit salad with chopped mint leaves and drizzle with orange juice. Toss gently.

5. Refrigerate, covered for 30 minutes for flavors to blend together. Divide salad equally among bowls. Garnish each with a whole strawberry and a sprig of mint.
