Chicken and Turkey Sausage Gumbo

Ingredients

  • 1 1/2 lbChicken, broilers or fryers, breast, meat only, raw
  •   Cooking spray
  • 1/2 lbLOUIS RICH, Turkey Smoked Sausage
  • 1/2 cupPeppers, sweet, green, raw
  • 2 1/2 cupWheat flour, whole-grain
  • 1 tspSpices, pepper, red or cayenne
  • 1/2 cupOnions, spring or scallions (includes tops and bulb), raw
  • 9 cupWater
  • 2 cupOnions, raw
  • 1/2 cupCelery, raw
  • 1 1/2 tspSalt, table
  • 1 leafSpices, bay leaf
  • 2 tblsParsley, raw

Directions

1. Spray the inside of a large skillet with cooking spray and place over high heat. brown the chicken, turning often. Remove skillet from heat and place chicken pieces onto a platter.

2. Add 1 cup of water to the skillet, scraping the bottom to loosen all of the browned bits. Return the chicken to the skillet and set aside.

3. Place the remaining 8 cups of water in a 5 quart dutch oven over high heat and bring to a boil.

4. Add the chicken and pan juices, along with the rest of the ingredients, except for the green onions and the parsley.

5. Cook, uncovered, 25 minutes, stirring occasionally. Stir in the onions and the parsley and cook for 5 more minutes. Remove the bay leaf before serving.
