Spinach Salad with Turkey

Ingredients

  • 1 medPeppers, sweet, red, raw
  • 1 largePeppers, sweet, yellow, raw
  • 1/2 cupOnions, raw
  • 1 lbTurkey, fryer-roasters, breast, meat only, cooked, roasted
  • 1/2 tspSalt, table
  • 2 tblsVinegar, cider
  • 1 tspGarlic, raw
  • 1/4 tspSpices, oregano, ground
  • 1 tspSugars, granulated
  • 1/2 tspSpices, pepper, black
  • 1/4 cupOil, olive, salad or cooking
  • 1 bunchSpinach, raw
  • 4 ozCheese, feta
  • 1/2 cupOlives, ripe, canned (small-extra large)

Directions

1. Place peppers, onion, and turkey cubes in a large bowl.

2. In a small bowl, whisk together vinegar, garlic, oregano, sugar, pepper, olive oil, and salt until blended. Pour over turkey mixture.

3. Add spinach and gently toss to mix. Crumble feta cheese into salad; top with olives.
