Potato Crisps with Caviar

Ingredients

  • 2 lbPotato, flesh and skin, raw
  • 1/4 cupChives, raw
  • 1/4 cupParsley, raw
  • 1 dashSalt, table
  • 1 dashSpices, pepper, black
  • 1/4 cupOil, vegetable, sunflower, linoleic (less than 60%)
  • 1/2 cupCream, sour, cultured
    Diet

  • 2 ozFinfish, caviar, black and red, granular
  • 1/4 cupChives, raw

Directions

1. Grate potatoes with a grater or food processor and place in a bowl. Add chives, parsley, salt, and pepper. Mix well.

2. In a large skillet, heat oil on high heat.

3. For each crisp, drop about 1 tbsp of potato mixture into oil and flatten. Fry on one side until crisp, about 2 minutes. Repeat on second side. Drain on paper towels. Repeat until all of the mixture is used up.

4. Garnish with sour cream, caviar, and a pinch of chives. Serve.
