Spicy Green Tomatoes

Ingredients

  • 1/2 cupCornmeal, degermed, enriched, yellow
  • 1/2 cupBread crumbs, dry, grated, plain
  • 1 tspSpices, paprika
  • 1/8 tspSalt, table
  • 1/2 tspSpices, pepper, black
  • 1 dashSpices, pepper, red or cayenne
  • 1 largeEgg, white, raw, fresh
  • 2 tblsWater
  • 4 largeTomatoes, green, raw
  • 2 tblsCheese, parmesan, hard

Directions

1. Preheat the oven to 450 Fahrenheit.

2. In a shallow dish, combine the first 6 ingredients. Set aside.

3. Lightly coat a baking sheet with vegetable cooking spray and set aside.

4. Beat egg white with water.

5. Dip each tomato slice into egg white/water mixture. Then, dredge in cornmeal mixture to coat.

6. Place slices in a single layer on a prepared baking sheet. Spray tops of slices with vegetable cooking spray.

7. Bake for 30 minutes, or until golden brown.

8. Sprinkle with Parmesan cheese during the last 5 minutes of baking. Serve immediately.
