Asparagus Pasta Primavera

Ingredients

  • 2 cupAsparagus, raw
  • 2 cupCarrots, raw
  • 1 1/2 cupPeas, edible-podded, raw
  • 1 tblsOil, olive, salad or cooking
  • 1/2 cupOnions, raw
  • 2 cloveGarlic, raw
  • 1 1/2 lbMacaroni, dry, enriched
  • 1/2 cupCheese, parmesan, hard
    Diet

  • 1/4 cupParsley, raw
  • 2 tblsAlcoholic beverage, wine, table, white
  • 1/2 tspSalt, table
  • 1/2 tspSpices, pepper, black

Directions

1. Drop the first 3 ingredients into a large saucepan of boiling water; cook 2 minutes. Drain and set aside.

2. Heat oil in a Dutch oven over medium heat. Add onion and garlic; sauti 2 minutes or until tender. Remove from heat.

3. Add asparagus mixture, fettuccine, 1/4 cup cheese, parsley, wine, salt, and pepper; toss well.

4. Top with remaining cheese.
