Ingredients
1 med Peppers, sweet, red, raw 1 large Peppers, sweet, yellow, raw 1/2 cup Onions, raw 1 lb Turkey, fryer-roasters, breast, meat only, cooked, roasted 1/2 tsp Salt, table 2 tbls Vinegar, cider 1 tsp Garlic, raw 1/4 tsp Spices, oregano, ground 1 tsp Sugars, granulated 1/2 tsp Spices, pepper, black 1/4 cup Oil, olive, salad or cooking 1 bunch Spinach, raw 4 oz Cheese, feta 1/2 cup Olives, ripe, canned (small-extra large)
Directions
1. Place peppers, onion, and turkey cubes in a large bowl.
2. In a small bowl, whisk together vinegar, garlic, oregano, sugar, pepper, olive oil, and salt until blended. Pour over turkey mixture.
3. Add spinach and gently toss to mix. Crumble feta cheese into salad; top with olives.
