Green Bean Salad with Walnuts

Ingredients

  • 1 1/2 lbBeans, snap, green, raw
  • 3/4 cupOil, olive, salad or cooking
  • 1/2 cupSpearmint, fresh
  • 1/4 cupVinegar, cider
  • 1/2 tspSalt, table
  • 1 cloveGarlic, raw
  • 1/4 tspSpices, pepper, black
  • 1 cupNuts, walnuts, english
  • 1 cupOnions, raw
  • 1 cupCheese, feta

Directions

1. Place walnuts on a baking sheet and broil in the oven until browned and fragrant, about 5 to 10 minutes, stirring and turning occasionally.

2. Wash beans and trim ends; cut into thirds. Parboil by dropping into boiling water for 5 minutes. Drain and plunge into ice water for 5 minutes; drain and chill.

3. Combine oil, mint leaves, vinegar, salt, garlic, and pepper a in food processor or blender and process 20 seconds; set aside.

4. Place beans in a large glass bowl and top with toasted walnuts, red onion, and feta cheese. Pour dressing over salad and toss.
